Braised Spareribs with Bitter Melon

Braised spareribs and bitter melon aka ‘Fu gua mun pai guat’ in Cantonese. Bitter melon has a lot of antioxidants and packed with great vitamins. It helps with better skin too! I didn’t enjoy this dish much growing up but lately I’ve been missing home so I called up my grandma and asked her how to make this dish. It’s a very simply dish and it best served with warm rice. So this is my grandma’s really easy recipe!

Ingredients

  • 1 medium bitter melon or 2 small bitter melons, sliced

  • 900 g of spareribs

  • 4 cloves of garlic, minced

  • 2 tsp minced ginger

  • 1 tbsp taucu (Chinese fermented soybeans)

  • 1 tsp corn starch

  • 2 tsp sesame oil

  • 1 tsp soy sauce

  • 2 tsp oyster sauce

  • 2 chillies (optional)

  • 2 tsp sugar

  • 3 tsp salt

  • oil

Steps:

  1. Marinade the ribs in touch, corn star, sesame oil, soy sauce, oyster sauce for 15 minutes.

  2. Using a colander, salt the sliced bitter melon for 30 minutes before squeezing out all the water. This is to draw out most of the bitterness.

  3. In a pot, sauté the garlic, ginger and chillies in a splash of oil until aromatic.

  4. Add the spareribs and allow it to cook on medium heat for 10 minutes before letting it simmer on low heat for 20 minutes.

  5. Once the ribs are tender, add your bitter melon and braise it in the sauce for another 10 minutes until the bitter melon becomes soft.

  6. Dish out and serve over a warm bowl of rice!
