Coconut & Lime Bars

It is winter here in Australia which means it is also citrus fruits season. My in-laws have a lime tree and it has tons of fruits so I made this really, really coconut lime bars.

Ingredients

  • 400 g biscuits (I used digestives)

  • 1 1/2 cups of desiccated coconut

  • grated zest of 5 limes (if they are really small, use about 7-10 limes)

  • 120 g butter, melted

  • 397g (1 can) sweetened condensed milk

  • Lime juice from 4 limes

Frosting

  • 500 g of icing sugar

  • 120 g butter

  • Lime juice of 3 limes

  • 30 g desiccated coconut

Steps:

  1. Line a 31x21 cm baking tin with baking paper.

  2. In a large bowl, crush the biscuits (or you can put it through a food processors). Mix in the coconut and grated lime zest.

  3. Add melted butter, condensed milk, lime juice to the biscuit mixture and mix it well. Press the mixture into the tin and refrigerate it.

  4. In a separate bowl, whisk in butter, lime juice and icing sugar until it looks like frosting.

  5. Spread the frosting over the slice and sprinkle extra zest on top and refrigerate it for at least 3 hours because cutting into slices.

  6. Enjoy!
