Mussels in White Wine and Tomato Sauce

Today it was my first time purchasing live mussels, de-bearding each one of them and then cooking them in a beautiful white wine and tomato sauce.

Ingredients mussels 🦪
- 1kg live mussels (I got mine from my local farmers market)
- 2 large Campari tomatoes, diced (about 2.5 cups)/ any tomatoes but Campari gives this dish sweetness
- 1 large brown onion, diced
- 1 1/4 cups white wine or rosé (I like mine with more sauce but you can reduce this)
- 2 tbsp chilli flakes
- 1 tsp sea salt or until to desired taste
- 3 cloves garlic, minced or finely chopped
- 1 tbsp olive oil
- Thyme or basil for garnish

Steps
1. Rinse, de-bearding and drain mussels.
2. In a large pot, add oil, onions, chilli flakes and garlic. Sauté until onions turn very light brown.
3. Add tomatoes and wine and let it simmer for 5 minutes.
4. Put the mussels and cook them until more of them open up and you can see they turn pale orange.
5. Garnish with herbs and serve with pasta or warm bread!
