Oatmeal Choc Chip Cookies

I’ve been doing intermittent fasting because my body is in a recovery mode where I’m not to do excessive exercise. Instead, I have been doing simple exercises and yoga stretches instead. I learned that butter is high in a fatty acid (CLA) and other vitamins that helps with muscles repair which means it’s a healthy fat for your body. I was always told that in order to be ‘skinny’, I need to avoid foods like cookies because of the high fat content which comes from butter, aside from sugar. But what people forget is that the ingredients you use define the terms ‘healthy’ vs ‘unhealthy’ and everything in moderation as long as your body is well nourished. So, here’s my take on one of my favourite wholesome cookies; oatmeal choc chip sultanas cookies that is wonderful with a glass of any milk.

Ingredients

- 2 cups quick oats (or rolled oats)
- 1 ½. Cups wholemeal flour
- ½ cup dark chocolate chips
- ½ cup sultanas (or dried cherries or cranberries) [optional]
- 200g butter, softened
- ½ cup raw sugar (or brown/coconut sugar| I used the sugar I have in my pantry)
- 2 large eggs
- 2 tsps vanilla essence
- 1 tsp baking soda
- 1 ½ tsp baking powder
- 1 tsp sea salt (more for sprinkle once the cookies are done)

Steps:
1. Preheat the oven to 180C degrees and line a baking tray with baking paper.
2. In a medium bowl, whisk butter, sugar, eggs and vanilla until well incorporated.
3. In a separate large bowl, combine flour, oats, chocolate chips, sultanas, baking powder, baking soda and salt.
4. Pour the butter mixture into the dry ingredients until well combined.
5. Using an ice cream scooper, scoop the dough into balls and place them on to the baking tray. The larger the dough balls, the more space it needs to be apart from one another.
6. Using a spoon, flatten the top if you like for flatter cookies but this is optional.
7. Transfer the tray into the oven and bake the cookies for 12-15 minutes or until golden brown. Bake longer if you want crispier and firmer cookies.
8. Serve with your favourite milk or even just enjoy them on their own! 🍪🥛
