Orange Greek Yoghurt Muffins with Chia Seeds
In the colder season of Australia, it is also known to me as citrus fruits season. I always have plenty of citrus fruits laying around my kitchen countertop. After testing this cake recipe twice, I switched it up into muffins so here’s to a lockdown classic bake fest!
Ingredients:
- Zest of 1 large navel orange (or in my case zest of 2 small oranges)
- Juice of the orange(s) you’ve used for the zest
- 1/4 cup olive oil
- 2 large eggs
- 1/2 cup Greek yoghurt
- 1 tsp vanilla extract
- 1 1/2 cup AP flour
- 1/2 cup raw sugar (or coconut sugar)
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch of salt
- 2 tbsp chia seeds (or poppy seeds)
Steps:
1. Preheat the oven to 180 degrees C.
2. Wash the orange(s) and grate it. Cut it into half and juice it. A little pulp is alright.
3. Add eggs, yoghurt, sugar, vanilla, oil and combine until smooth.
4. Mix in the flour, baking soda, baking powder and salt until throughly incorporated. (If it’s too dry, add another tbsp of oil)
5. Combine the chia seeds and scoop the batter into a lined muffin tray.
6. Bake the muffins 20-30minutes or until an inserted toothpick comes out clean.
7. Let them cool down before serving
